Self taught baker Simon discovered his passion for all things bread about 5 years ago. He started to dabble in sourdough after a friend gave him some leaven to play with. That marked the beginning of Heart Breads. Now he and his wife Rachel run a small artisan organic wood fired bakery supplying the local Byron Bay Regional Farmers Markets. And a few local restaurants.
